It’s tomato and basil time of year. (I LOVE that time of year.)
I want to tell you about this lunch I made that is my new favorite way to enjoy tomatoes and basil. These two items separately are amazing, but together….Best. Lunch. Ever.
I feel like I invented this, but I can’t possibly be the first in the world. But just in case I really am the first, I’m going to tell you all about it…then you’re going to go make it and probably cry because you love me so much for sharing it with you.
Start with some bruchetta. I used this recipe, but I think you could use any recipe you like. It’s all about the tomatoes anyway. I used romas from my garden.
Next, make some pesto. I won’t even give you a recipe for that, since it’s such a staple. As long as yours has basil, pine nuts, parm, olive oil, and garlic, you’re in good shape. (And salt. It has to have salt, too.)
Now, we’re going to make a grilled cheese sandwich. But not just any grilled cheese sandwich:
Bread
Pesto
Thick slice of fresh mozzerella
Pesto
Bread
Olive oil or butter on both sides. Grill until the bread is toasty golden brown and the cheese is melty.
And then…put the bruchetta on the grilled cheese sandwich before you take a bite.
