This isn’t your typical “healthy twist” recipe. In fact, the twist isn’t immediately visible, but to me, it makes an incredible difference.
This post was inspired by my husband. Yesterday evening Jon wanted something to snack on, so he made himself a peanut butter and jelly sandwich. Before he took his first bite, he said, “Hey! This whole sandwich is made from scratch.”
And he was totally right. I’d made homemade sandwich bread the day before, and he’d used jalapeno jelly and fresh peanut butter just whipped up that afternoon.
This marks a small milestone in the state of our household pantry. It’s a constant goal of mine to have more “from scratch” products in our house, but it’s a long process of changing one thing at a time. I feel incredibly proud to know that we can make a from-scratch PBJ in our house, not because that was my specific goal, but because my overall goal of knowing what ingredients we’re eating–and making sure they’re made from real food–is progressing.
I know the ingredients include sugar and bread flour, which are frowned upon by the healthiest among us, but the fact that I can personally promise a complete lack of unnatural preservatives, chemicals and unnecessary ingredients in this sandwich makes it a healthy accomplishment in my book.
