What’s for dinner, Molly Mogren Katt?

This post is part of a series called What’s for Dinner?, in which I invite my favorite bloggers, business owners and online personalities to share with you their own go-to recipes, the favorite meals, snacks, drinks they make over and over again. You’ll get to meet some of my online friends, and we’ll all get some new (fantastic) recipes to try!

Today’s guest blogger and I go way back…before either of us had a blog. Molly and I went to Journalism School in in Madison, Wisconsin, together more than a decade ago*  and I recently reconnected with her and learned about all the fascinating things she’s been doing since we went to school together.

Every time I visit Molly’s blog, Hey Eleanor!, I get stuck there for a lot longer than I planned. Molly is hilarious and her posts about trying the things she’s afraid of are inspiring, educational and wildly entertaining. I’m following her capsule wardrobe posts with interest and can’t wait to try it myself next year. I dare you to watch this video and not laugh out loud. And, as we’ll soon find out, she has a tasty breakfast/brunch recipe that’s going on my list to try this weekend.

* Am I really old enough to say things like that? Let’s all act like the answer is no.

What’s for dinner, Molly?

Two years ago, my guy and I got weirdly into this Tim Ferris book. It’s all about fueling your body with healthy stuff that keeps you full, builds muscle and revs your metabolism. Tim swears by starting off the day with a big boost of protein, typically eggs or meat with veggies. That sounded awesome, but come on. Who has time to make that every day? Not I. But I did have time to make an egg bake on Sunday, which could be divvied up into eight servings throughout the week. It’s a breeze!

My general template is one-pound meat (ground turkey, beef, leftover pulled pork, etc.), two-to-three cups of cooked veggies, eight eggs, ½ cup full-fat coconut milk, seasonings. That’s it.

Every Sunday, I do some variation of this recipe. It’s great for a lot of reasons—A) it’s easy; B) our weekday breakfasts are a cinch and C) it’s the perfect place to dump leftovers, like left over veggies or carnitas. And because we try to cook paleo at home, it’s a next to mindless way to have a delicious dairy/sugar/gluten-free meal.

Here’s a version I’m into these days.

Molly’s Go-To Recipe: Sweet & Spicy Paleo Curry Egg Bake

  • Paleo egg bake recipeTwo medium sweet potatoes, sliced
  • ½ yellow onion, diced
  • 1 clove garlic, minced
  • 1-pound ground turkey
  • 1.5 T olive oil
  • 1 T coconut oil
  • 3 ounces tomato paste
  • 1 T curry powder
  • ¼ c yellow raisins
  • ½ c coconut milk
  • 8 eggs, beaten
  • Salt
  • Red pepper flakes (optional)

Pre-heat oven to 400. Place sliced sweet potatoes in a large bowl and coat with olive oil. Mix well. Place sweet potatoes on a single layer in a baking sheet. Sprinkle with salt. Roast for 25 minutes.

Meanwhile, in a large skillet, heat coconut oil and sauté onions and garlic over medium heat. Once translucent, add ground turkey. Be sure to break up the turkey well—big hunks just don’t taste as good. Once cooked through, mix in the tomato paste, curry powder and yellow raisins. If you like spicy, give it a generous shake of red pepper flakes. Sprinkle with a little salt, too.

In a single layer, place about ½ of the roast sweet potatoes on the bottom of a 9 x 13 (or a 9-inch pie plate) baking dish. Top with the ground turkey mixture. Place the remainder of the sweet potatoes on top of the turkey. Add the coconut milk to the eggs, mix well, then pour evenly over the baking dish.

Bake at 375 for 45 minutes.
