We haven’t been staying on top of our CSA produce lately, due to not being at home so much, being busy and being downright lazy, to be quite honest.
Remember my post with tips about getting the most out of your CSA? Well, I took my own advice last night and chopped up a bunch of those veggies for the freezer. This time, it’s in the form of mixed vegetables for stir fry. Jo-Anna at A Pretty Life posted a dynamite recipe for make-it-your-way stir fry last week, which Jon and I tried and LOVED. My favorite part is that you use a can of pineapple chunks and the juice too–I always hate it when the juice goes to waste. The stir fry was easy, super tasty and made really great leftovers, too.
Knowing we’ll want to have stir fry again in the near future, I chopped up a load of onions, peppers, broccoli, green beans and a few carrots, and unceremoniously crammed them into quart mason jars to freeze.
Once I pull them out of the freezer, we’ll just need to add some meat, whip up a little sauce and steam some rice. Voila! Tasty dinner, and the chopping is already done.
