I’ve converted! Inspired by this post on Annie’s Eats, I bought some dried black beans and kidney beans. I had tried dried beans once before. I soaked chick peas overnight, and tried to make hummus with them. It was awful. It did not work, and I didn’t know why.
Then I read Annie’s post and realized you’re also supposed to BOIL them after you soak them. Uncooked beans will not make hummus. Oops.
With detailed instructions, the second attempt went swimmingly. I prepared about a pound and a half of black beans and a half pound of kidney beans, and our freezer is now stocked for the next few months. The process was very easy, it just requires that you’re home for a few hours to keep an eye on the stove (I used the quick-soak method).
Dried beans are super cheap, and when I make them at home I can be sure there are no other ingredients or preservatives involved. The key for me is making a huge batch; it would take way too long to do the whole process every time I want beans.
Anyone here ever tried dried beans? Do you have any tips or tricks I should know about?
